You must master the second chance and once more abilities before you begin since any one of his hits could prove fatal without them. Fill your deck with potions and don't use any special type of dodge roll (like thunder roll) as it lessens your invulnerability and this will save your life! Try to avoid the temptation to block his attacks, try to evade them instead. You should also have a good variety of mines in your deck (which you do)and when he gives you an opening set the trap in a way so the mines are between you and Vanitas, when he comes toward you he should crash into them. It takes some time to learn when is a safe time to use a potion or drop mines but you can generally do so when Vanitas swings and misses. Don't use commands when he uses the move where he hides in a dark orb and sends a series of shadow duplicates at you. He will normally open the fight with this move so the best thing to do is to get close to him and hit him with a standard hit a couple of times and then go back to the dropping mines and watching him run into them. If you're still having trouble then go up a couple of levels to raise your level so your magic is more effective. Thats normally the thing to do. Hope this helped.
