You can skip The Badge and the Burden (9-10), though they offer some development for Weiss. Jaundice (11-12) and Forever Fall (13-14) are Jaune-centric and don't move the overall plot forward, though they reveal racism against Faunus and also that Jaune forged his papers to get into Beacon and Pyrrha's Semblance is polarity (magnetism). Jaune's importance is decreased in Volume 2, which is a much more solid season overall than Volume 1, though he does have a subplot through the first half focused on a love quadrangle (handled MUCH better than the romance in the first half of The Legend of Korra, though still possibly annoying). I don't think any of Volume 2 is really skippable, though YMMV.
