Merlin is a good possibility actually, I wouldn't mind that. Bedeviere I don't think has any characterisation at all.

And yeah, those two aren't in the Visual Novel, but they are possible canons, as confirmed by Fate/Hollow Ataraxia.

Already is a fourth and fifth route. One is an Illya route where Shirou gets involved with... Illya, obviously. It was cancelled, but it's implied that's where Archer comes from. The fifth is one where Shirou follows Kiritsugu's path exactly, and becomes a complete anti-hero, killing the few to save the many.

Kuzuki didn't summon Caster, somebody else did, and he became her Master after she killed her original one. He helps Caster because she asked him, no other reason.
